Courgette Crustless Tart














I found this recipe online the other day and thought it sounded amazing for a light summer dinner. I had to to a bit of American to English conversion (for those who don't know, zucchini is a courgette and a cup is about 128g) but it was pretty simple to make and tasted great served with parma ham, salad and a glass of Pinot.
